Ravioli Lasagna Recipe — The Easiest Lasagna You’ll Ever Make

More than a handful of nights a month, I have no energy to cook, so I resort to a dinner that’s doable even in my laziest moments. Ravioli lasagna is one of those recipes.

It’s the easiest lasagna you can make, my family loves it, and I get zero complaints. It’s also almost entirely assembly — there’s no boiling noodles, no browning meat, no making a ricotta filling.

The oven does the work, and about 40 minutes later, you have a bubbling, cheesy casserole that tastes like lasagna.

The shortcut is frozen cheese ravioli. Instead of boiling lasagna noodles and layering them with a homemade filling, you layer the frozen ravioli straight from the bag with marinara, mozzarella, and Parmesan.

The ravioli cooks through in the sauce inside the oven, the cheese melts into a golden crust on top, and the whole thing tastes like lasagna — the same cheesy, saucy, layered comfort that makes lasagna worth the effort, without the effort.

I’ve been making this version for a while now, and it’s become the dinner I reach for when I want something that tastes like a Sunday lasagna on a Wednesday night.

It’s also the version I make when I’m feeding people who love lasagna and don’t want to hear about how long it took.

It looks like lasagna, tastes like lasagna, and nobody has to know it took about 10 minutes of hands-on work.

Why This Recipe Works

A few specific decisions make this ravioli lasagna work.

Use enough marinara to hydrate the frozen pasta. Frozen ravioli is dense, dry pasta dough filled with cold cheese, and it drinks up a lot of liquid as it bakes. Three cups of marinara for 24 ounces of frozen ravioli isn’t enough — the edges come out dry and chalky. This version uses 3½ to 4 cups of marinara, which is enough to keep the pasta hydrated through the bake.

Pour a quarter cup of water into the corner of the pan before covering it. The water creates steam under the foil, which is what fully hydrates the frozen ravioli during the covered bake. This small step makes a big difference in the texture of the finished casserole.

Spray the underside of the foil with cooking spray. Pile the top of this casserole with shredded mozzarella, and a dry sheet of foil will weld itself to the cheese and rip half the topping off when you uncover the pan. A quick spray of the underside of the foil, or a slight tent so the foil doesn’t touch the cheese directly, prevents that entirely.

Rest the casserole for 15 minutes before slicing. This is the step that keeps the layers from running all over the plate. As it cools, the sauce thickens, the cheese sets, and the starches in the pasta relax, so the slices come out clean instead of soupy.

Layer the cheese between the ravioli, not just on top. Place mozzarella and Parmesan between every layer of ravioli, not just on top, so every bite gets a creamy, cheesy center instead of plain pasta with cheese only on top.

Ingredients That Matter

Most of the ingredients in this ravioli lasagna are straightforward. Three of them are easy to get wrong, so those are the ones worth explaining.

Frozen cheese ravioli. Use frozen cheese ravioli, not fresh refrigerated ravioli. Frozen ravioli holds up better in the oven and cooks through without turning mushy. If you only have fresh ravioli, cook it for a few minutes less and reduce the covered bake time by about 10 minutes.

Marinara sauce. Use a high-quality jarred marinara, not a thin tomato sauce. The marinara is the star of this recipe, and a thin sauce will leave you with a watery casserole. Use 3½ to 4 cups total (about 1½ jars) so the frozen pasta has enough liquid to hydrate.

Mozzarella and Parmesan. Use low-moisture part-skim mozzarella, grated from a block if possible. Pre-shredded mozzarella works, but it doesn’t melt as smoothly. Parmesan adds a salty, nutty note that ties the whole casserole together.

How to Make It

Step 1: Preheat the oven and grease the pan.
Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish with nonstick spray or olive oil.

Step 2: First sauce and ravioli layer.
Spread 1 cup of marinara evenly across the bottom of the dish. Arrange half of a 24-ounce bag of frozen cheese ravioli in a single, snug layer over the sauce.

Step 3: Add the middle sauce and cheese layer.
Spread 1½ cups marinara evenly over the ravioli, then sprinkle 1 cup mozzarella and ¼ cup Parmesan over the sauce.

Step 4: Top layer.
Arrange the remaining frozen ravioli in a final layer on top. Spread the remaining 1 to 1½ cups of marinara over the ravioli, making sure every piece of pasta is covered so it doesn’t dry out. Sprinkle the remaining 1 cup of mozzarella and ¼ cup of Parmesan over the top. Gently pour ¼ cup water into one corner of the pan.

Step 5: Cover and bake.
Spray the underside of a sheet of aluminum foil with nonstick cooking spray, then cover the baking dish tightly. Bake at 375°F for 30 minutes.

Step 6: Brown the cheese.
Carefully remove the foil. Return the uncovered baking dish to the oven and bake for another 10 to 12 minutes, until the cheese is melted, bubbling at the edges, and golden-brown on top.

Step 7: Rest and serve.
Remove from the oven and let rest uncovered for 15 minutes before slicing. Garnish with fresh basil or parsley, slice into squares, and serve.

Tips and Troubleshooting

The casserole turned out dry, or the ravioli edges were chalky. This usually means there wasn’t enough sauce, or you didn’t pour water into the pan before covering. Use 3½ to 4 cups of marinara, and pour ¼ cup of water into the corner of the pan before covering.

The cheese ripped off when you removed the foil. Spray the underside of the foil with nonstick cooking spray before it goes on, or tent the foil slightly so it doesn’t touch the cheese directly.

The casserole turned out watery. This usually means the marinara was too thin or you sliced the casserole too soon. Use a thick marinara, and let the casserole rest for the full 15 minutes before slicing.

The cheese didn’t brown. Remove the foil for the last 10 to 12 minutes. If the cheese still isn’t browning, switch the oven to broil for 1 to 2 minutes, watching closely so it doesn’t burn.

The slices fell apart. Let the casserole rest for the full 15 minutes before you cut into it. That resting time lets the sauce and cheese set, which helps the slices hold together.

Easy Variations

Cheese ravioli lasagna with meat sauce. Swap the marinara for a jarred meat sauce, or brown 1 pound of ground beef or Italian sausage in a skillet and stir it into the marinara before layering. This makes the casserole heartier and higher in protein.

Frozen ravioli bake with vegetables. Add a layer of sautéed mushrooms, zucchini, or spinach between the ravioli layers. The casserole becomes more vegetable-heavy and slightly lighter.

Ravioli casserole with Alfredo sauce. Swap the marinara for a jarred Alfredo sauce and use mozzarella and Parmesan as directed. The casserole becomes a creamy, cheesy white lasagna, closer to a ravioli Alfredo bake.

Frozen ravioli recipes crockpot. Layer the ingredients in a slow cooker instead of a baking dish, and cook on low for 3 to 4 hours, or on high for 2 hours. Add the cheese in the last 30 minutes. The crockpot version is more hands-off, but the texture is slightly softer.

Easy ravioli lasagna bake with pesto. Add 2 tablespoons of pesto to the marinara before layering. The casserole becomes more herbaceous and slightly more complex.

Storage and Make-Ahead

You can assemble the unbaked casserole up to 24 hours ahead, cover it, and refrigerate it. Add 5 to 10 minutes to the covered bake time.

Store the baked casserole in a sealed container in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 90 seconds to 2 minutes, or in a 350°F oven for 15 to 20 minutes.

Freeze the casserole in individual portions for up to 3 months. Thaw overnight in the refrigerator and reheat in a 350°F oven for 20 to 25 minutes.

Store leftovers in the refrigerator within 2 hours of cooking. Reheat to 165°F before serving. Discard any casserole left at room temperature for more than 2 hours.

FAQ

Can I use fresh ravioli instead of frozen?
Yes. Fresh refrigerated ravioli works, but it cooks faster, so reduce the covered bake time to about 20 minutes and check it before uncovering.

Do I need to boil the ravioli before baking?
No. Layer the frozen ravioli straight from the bag. It cooks through in the sauce inside the oven, and boiling it first will make it mushy.

Why does this recipe use 3½ to 4 cups of marinara instead of 3?
Frozen ravioli is dense and absorbs a lot of liquid as it bakes. Three cups isn’t enough — the edges of the ravioli come out dry and chalky. Using 3½ to 4 cups, plus a quarter cup of water poured into the corner of the pan, keeps the pasta hydrated through the bake.

Can I add meat to this ravioli lasagna?
Yes. Brown 1 pound of ground beef or Italian sausage and stir it into the marinara before layering. The casserole becomes heartier and higher in protein.

Can I make this in a slow cooker?
Yes. Layer the ingredients in a slow cooker and cook on low for 3 to 4 hours, or on high for 2 hours, adding the cheese in the last 30 minutes.

Closing

Make this ravioli lasagna on a lazy night when you want something that tastes like a Sunday lasagna without the two-hour process.

It reheats beautifully, freezes well, and makes a weeknight feel a little more manageable.

I’ve been making this one for a while now, and the technique in the recipe card—the extra marinara, the splash of water under the foil, the greased foil, and the 15-minute rest—is what keeps it from coming out dry or soupy.

If you make the meat sauce version or the crockpot version, let me know how it turns out.
